Easy Cheesy Chicken Broccoli Noodle Casserole

This is an all-time fave. My toddlers love it, my grandparents love it, and my hubs loves it! It’s a real crowd pleaser. 

Here’s what you need:

- 16 oz rotini pasta 

- 2 cups cooked, cubed chicken breast 

- 2 cups shredded cheese

- 1/4 cup sour cream 

- 1 cup broccoli florets (You can always add more. Q is picky so I am slowly adding more every time I make it.) 

- 1/2 cup milk or pasta water

- 1 can cream of chicken soup 

- 1/2 tsp lemon juice

- 1/2 tsp onion powder 

Time saver: Cook and cut the chicken ahead of time! 

Cut chicken in to small cubes. Sauté chicken with garlic and herb seasoning of your choice, or keep it simple with salt and pepper.

Cook pasta. I have used every kind of noodle, including egg noodles. I have never been disappointed! Lately I’ve found that rotini is easiest to pick up with a toddler spoon. 

Add all ingredients to pan and mix ‘til everything is evenly coated. Once everything is warm and delicious, transfer to baking dish and throw that baby in the oven at 400 degrees. Bake for 25-30 minutes.

If you are running short on time, you can skip the oven. The result will be a creamy mac and cheese dish. Baking it yields a more casserole-style dish. I do whatever I have time for that day.
