Grandma’s Pistachio Salad

If I don’t bring this back, who is going to? My grandma has stopped cooking due to her dementia. If I don’t make these weird fruit salads we all know and love, they may soon be only a memory. A memory of a green marshmallow salad that happens to be addictive af. 

Why is it a salad? How? Who named sweet fruit dishes “salads?” Whoever it is, I would like to shake their hand, because this is the furthest thing from a salad. Okay enough enough, let’s get started!

Ingredients: 

1 can crushed pineapple (in juice, NOT syrup) 

1 box pistachio pudding mix, instant 

2 cups Cool Whip

1 1/2 cups mini marshmallows

Maraschino cherries for garnish 

Nuts: 1/2 cup pecans OR pistachios 

We substitute ½ cup shredded coconut! Q has a peanut allergy. I get anxiety with any nuts if I’m honest. The less nuts, the better. LOL. Shredded coconut gives us the little crunch we want and tastes great! 

Step 1:

In large bowl, combine the dry pudding mix, crushed pineapple, and pineapple juice from the can. You need the juice to make the pudding! 

Step 2: 

Fold in shredded coconut (or nuts) and mini mallows.

Step 3: 

Fold in 2 cups of Cool Whip.

Step 4: 

Cover and refrigerate for at least an hour before serving. Garnish with extra Cool Whip, chopped nuts or coconut and maraschino cherries. 

Can you taste it already? Does this remind you of every potluck with your grandma? I’m kidding, I’m kidding.
