Green Salsa Lime Chicken Bowls

These green salsa and lime chicken bowls are in my top five favorite recipes. The secret marinade came from the man, the myth, the legend – my dad! I’ve shared it with everyone. It’s just too good not to. Sorry Pops! 

You may have seen me use the same lime vinaigrette in Meg’s pasta salad recipe in a past blog. I am telling you, it’s my absolute favorite! I use it for multiple dishes. 

Let’s get started:
Ingredients: 

Marinade

Chicken bowl 

  • Boneless skinless cubed chicken

  • Canned pinto beans

  • White rice (can substitute brown rice)

Garnish 

  • Lettuce

  • Chopped tomato

  • Avocado

  • Shredded cheese

  • Sour cream

  • Salsa

Step 1: Marinate the chicken. Pour half of each bottle (dressing and salsa) into a Ziploc bag with the cubed chicken. Marinate for at least 30 minutes.

Step 2: Cook chicken until no longer pink in the center. 

Step 3: Cook rice using your preferred method (traditional, Instant Pot, etc.) and warm beans.

Step 4: Prepare lettuce, tomato, and avocado for garnish.

Step 5: Build your bowl. Here’s how I make mine:

  1. Rice

  2. Beans

  3. Chicken

  4. Sour cream

  5. Salsa

  6. Lettuce, tomato, avocado and cheese

Step 6: ENJOY. 

I got so hungry while typing up this blog! I think I’m going to make this for dinner tomorrow.
