Pumpkin Pie French Toast

French toast is such a comfort food for me. It reminds me of my mom – she has always prided herself on making delicious French toast, and I couldn’t agree more! It’s also my favorite breakfast for dinner option, although this pumpkin pie French toast is delicious at any time of the day.

Should we get started?  

Ingredients: 

  • 8 slices of Texas toast or French bread

  • 1/2 cup pumpkin puree

  • 2 eggs

  • 1/2 cup milk

  • 2 tbsp brown sugar

  • 1/2 tsp cinnamon

  • 1 tsp pumpkin pie spice

  • 1/4 tsp vanilla

Step 1. Whisk eggs, milk, pumpkin puree, vanilla, spices and brown sugar in a large, shallow bowl or a pie pan for easy dipping. 

Step 2. Melt 1½ tablespoons butter in a large skillet over medium heat. You’ll want to grease/butter the surface after each piece. The batter is sticky, so butter helps prevent sticking and adds great flavor. 

Step 3. Dip each piece of bread into the egg mixture, turning to coat both sides evenly. Add to heated skillet and cook until golden brown (2-3 minutes per side). Repeat until all bread is dipped and cooked! Don’t forget to add butter as needed.

Step 4. ENJOY! Serve with additional butter, syrup and Cool Whip. If you want to go lighter on the sugar, this recipe tastes great with whipped cream alone. I didn’t introduce syrup to my kids until this year, LOL. They never even knew what they were missing. 

This year is weird – I can’t believe the holiday season is already here!
