Granola Yogurt Fruit Cups

These granola yogurt fruit cups are my new favorite morning treat. I love to prep a bunch of these at the beginning of the week and serve them in the mornings before our summer adventures. I'm still trying to figure out our routine now that school is out and having one less thing to think about is super helpful. These would also be great for a brunch or morning playdate!  

Let’s get cooking! Preheat oven to 350 degrees. You’ll need a muffin tin.  

Ingredients: 

Granola Cups 

  • 2 cups oats 

  • 1/2 cup maple syrup  

  • 1/2 cup sunflower butter  

  • 1 tsp vanilla extract 

  • A pinch of salt  

Toppings 

  • Vanilla yogurt  

  • Raspberries 

  • Strawberries 

  • Blueberries  

  • Kiwi 

You can switch up the fruit and yogurt according to your preference. I also like to use strawberry yogurt, and I typically use whatever berries or other fruit I have on hand.  

 Step 1: Mix all granola cup ingredients in a bowl. 

 Step 2: Grease the muffin tin. Spoon the granola mixture into the muffin tin. Use a spoon or your hands to press the mixture down, forming cups.  

 Step 3: Bake for 18-20 minutes. While baking, cut fruit into small pieces.  

 Tip: When you remove the cups from the oven, let them cool completely (or they might fall apart). Trust me, it has happened to me! If it does, I just throw it into a bowl and move to step 4. It’s still delicious.  

 Step 4: Add yogurt to granola cups and top with your favorite fruit. EN-FREAKING-JOY.  

 I love these, the kids love these, and I hope you love them too! They help make our hectic mornings feel a little easier. Prep the cups ahead of time and fill them when you’re ready to enjoy!
