Homemade Cereal Bars

With school ending soon, I’ve been trying to think of some fun new snacks to take along with us on our summer adventures. Bonus points if they’re healthy-ish. These homemade cereal bars hit the mark – they're kid-approved and super easy. 

Let's get started!

Ingredients: 

  • 1½ cups oats

  • 4 cups Cheerios

  • 1/2 cup sunflower or peanut butter (room temp)

  • 1/2 cup honey

  • 9x9 pan lined with parchment paper

  • 1/4 cup mini chocolate chips or dried fruit (optional)

Step 1: Add dry ingredients to a large bowl and mix well. 

Step 2: In a smaller bowl, mix honey and sunflower butter together until smooth. 

Step 3: Pour honey/sunflower butter mixture over the dry ingredients and mix well. I like to use my hands for this step. It’s messy, but it’s the easiest way to get an even mix.

Step 4: Once evenly mixed, pour into parchment-lined pan. 

Step 6: Press down firmly, smoothing until you have a flat surface. The bars should be about 1½ inches thick. 

Step 7: Chill in the fridge for a full 4 hours. Don’t cheat or they will fall apart. I'm speaking from experience here. 

Step 8: Cut into squares and ENJOY. 

These DIY cereal bars will keep for about a week, but they never last that long because they are a fan favorite! I haven’t yet met a kid (or adult) who didn’t like them. 

You could definitely get creative and try other cereals and mixes. My kids are pretty basic and know what they like, so I stick to this tried and true recipe.
