Dairy-free Coffee Popsicles

I recently discovered the magic of coffee ice cubes, and I can’t get enough. Feeling tired? Pop in a coffee cube. Bored? Pop in a coffee cube. LOL. Need an afternoon pick-me-up? Coffee ice cubes with almond milk just feels luxurious. Pinkies up! 

With the weather warming up, I’ve also been loving these creamy coffee popsicles. Every day by about 3 o’clock, I’m fading fast and need a little boost to get me through the evening. I grab a coffee popsicle and eat it secretly in a weird corner of the house (parents know). After that, I’m refueled and ready to enjoy the rest of our day!

Ingredients:

  • 12 ounces of your favorite dairy-free milk (I prefer coconut milk and almond milk).

  • 1/4 cup maple syrup

  • 2 tsp vanilla extract

  • 12 oz. store bought cold brew (or brew your own coffee)

I like to add a splash of French vanilla creamer, cause I’m a French vanilla addict.

Optional: 

  • Dark chocolate chips, melted for drizzle

  • Chocolate covered espresso beans

Step 1: Throw everything in the blender and blend until smooth. Pour this delicious, creamy mixture into your popsicle molds. Insert sticks and freeze for 6+ hours. 

Step 2 (optional): Once you have poured your mixture in, you can add some flair. We like to add espresso beans, crushed or whole. Once frozen, drizzle chocolate over the pops to make them feel like a real treat. 

Store finished popsicles in a single layer in a freezer bag or air tight container. 

There are so many variations of these, and I love all of them. I really don’t think you can go wrong with these! I hope you enjoy this little bit of caffeine to get you through your day.
