Pineapple Fried Rice

Fried rice feels hard to explain because it’s something I throw together all the time. I usually put every sad veggie in my fridge into a pot with soy sauce and rice. There you have it, everyone’s favorite fried rice. This is a great way to eat leftovers but can also be made from fresh ingredients.

Let’s get started!

Ingredients

  • 1 1/2 cup fresh or canned pineapple 

  • 3 cups rice, cooked

  • 1 cup frozen vegetable medley 

  • 1/4 cup soy sauce (add more/less to taste)

  • 1 scrambled egg 

  • 1 teaspoon garlic powder

  • 1 tbsp of sesame oil 

  • Red bell pepper

  • 1/2 yellow onion 

Garnish with green onion and sesame seeds. 

If this is your main course, you can add protein. I like to add chicken to mine.  You can add two chicken breasts marinated in teriyaki sauce or your favorite Asian-inspired marinade.

This recipe is super flexible, and you can add/remove ingredients to your taste. 

Step 1. I don’t always use a fresh pineapple, but when I do, it’s the real deal. If I’m feeling festive, I use the pineapple as a bowl. Here’s how:

  • First, cut directly down the center, leaves and all.

  • Then guide a knife where you will be removing the pineapple. 

  • Scoop out the pineapple and remove the center hard part.  

Yes, this is a lot of work, but the cute presentation is worth it for occasions. If you’re pressed for time, use canned. They’re still very tasty – I’ll polish off a can of pineapples in minutes.

Step 2. Prep everything! Cook your protein if necessary. Scramble the egg in the pan and then move it off to the side. Dice red bell pepper and onion. 

Step 3. Using the sesame oil, sauté onion and bell pepper. Add garlic powder or fresh minced garlic. 

Step 4. Once the onion and bell pepper are translucent, add the frozen veggies. This is the time to add your cooked chicken to the mix. 

Step 5. Once everything is cooked, add the pineapple. You don’t want to add the pineapple too early, or it will cook down and become mushy.  

Step 6. Add the rice, soy sauce, and cooked egg.  Mix everything together until evenly distributed. 

Step 7. Once the fried rice is ready, you can return to the pineapple bowl or other serving dish. Garnish with green onion and sesame seeds.
