Pumpkin Pie PopTarts

I’m obsessed with fall this year, and I’m not sorry about it. Summer in quarantine felt SO LONG. I am ready to go all in this fall with fun pumpkin and Halloween recipes. Here’s an easy crowd pleaser that’s sure to put you in the fall spirit!

You’ll need:

  • 2 boxes of ready pie crusts (1 box comes with 2 crusts) 

  • 1/2 cup of canned pumpkin

  • 1 egg yolk 

  • 1/4 cup sugar

  • 1/2 tsp pumpkin pie spice 

  • 1 tbsp milk 

  • Melted butter to brush on top (optional)

Let’s talk frosting. I’ve tried making my own frosting glaze in the past, and I just do not like the way it comes out. I’m not a baker, as I’m sure you’ve gathered from the store-bought pie crust. Haha! I buy this whipped fluffy white frosting to save time and sanity.

Tips:

  • You can use cute cookie cutters to make smaller, kid-sized pop-tarts. I made snack-size cause OMG it’s fall and I’m feeling very festive this year! 

  • 1 box of pie crust will make you 4 standard-sized rectangle or square pop-tarts.

  • I like to use one box of crust for rectangular pop-tarts and one box of for cute shapes.

Let’s get started!

  1. Preheat oven to 425 degrees.  

  2. Set out your pie crust, following the instructions on the box. 

  3. Make your filling. Mix pumpkin, egg yolk, sugar, pumpkin pie spice and milk in a bowl.

  4. Roll out your crust. Cut your desired shapes using cookie cutters or a knife.  

  5. Place a full spoonful of filling in the middle of half of your shapes.

  6. Add the top layer.

  7. Fork the edges together.

  8. Brush with melted butter (optional).

  9. Bake (5-8 minutes for small cookie cutters and 10-15 minutes for large rectangles).

  10. Frost the cuties! I put a couple spoonfuls of frosting into a bowl and microwave for 15 seconds. Use a spoon to drizzle frosting over the pop-tarts before they cool. It’s all in the wrist!
    You can also throw the warm frosting in a Ziploc bag, cut the corner and pipe the frosting on like you’re a professional baker. 

  11. Throw some sprinkles on BEFORE the frosting dries! 

BOOM BOOM BOOM. You da bomb + just made the most bomb treat.
