Refreshing Cucumber Salad

Who doesn’t love cucumbers? The late spring weather has me craving fresh and easy salad recipes, so this cucumber salad has quickly become a staple in our home. It’s a great side dish and a healthy alternative to serving cucumbers and ranch. The best part is the kids can’t tell the difference!

Let’s get started.

Ingredients:

  • 3-4 Cucumbers peeled and sliced

  • 1/2 cup sour cream or Greek yogurt

  • 1½ tbsp fresh dill, chopped (dried will work, but fresh is preferred)

  • 1 tbsp vinegar

  • 1/2 tsp salt

  • 1/2 tsp pepper

Step 1: In a medium bowl, combine all ingredients besides cucumbers and set aside.

Step 2: Wash and thinly slice cucumbers.

Step 3: Add the sliced cucumbers to the dressing. Mix well and serve fresh.

This dish will keep for 24 hours, but the cucumbers will soften and create some extra liquid. If that happens, just drain juice, stir and serve.

Tips:

  • Use fresh cucumbers. They taste the best and have a satisfying crunch.

  • Add a tsp of garlic and sliced onions for some extra flavor.

  • Its farmer’s market season, so try to grab some fresh dill if your local store doesn’t have it. The fresh dill is so delicious in this recipe.
